Yamazato Japanese Fine Dining at Hotel Okura Macau is collaborating with Dewazakura Sake Brewery Co.,Ltd. to present “Dewazakura Sake Pairing” Menu at Yamazato from October 12-28, 2018.
Dewazakura Sake Brewery was founded in 1892 in Tendo city, Yamagata Prefecture, located 300 kilometers north of Tokyo. Tendo City is hot in the summer and often exceeded 35 degrees Celsius and snowfall higher than one meter in depth in the winter. The natural features and climate made the region become a major rice and fruit production center. Dewazakura Sake Brewery crafted from the high quality rice in small tanks its make Sake’s taste exceptionally refined and smooth.
During the promotion period from October 12-28, Yamazato has selected 4 kinds of Sakes:
“Tobiroku” sparkling Sake is much like champagne, it is crisp, dry and effervescent – a lively companion on any occasion and enjoy with a wide range of foods.
“Junmai Daiginjo Yuki Megami” is the latest brewery rice available in 2015 in Yamagata. It has an elegant fragrance and feminine, delicate taste and smooth texture.
“Yamahai Hiyaoroshi” is a type of Sake that pasteurized only once before put in a Sake storehouse over summer and release it during three months in autumn from September through November. It is an autumn tastes and delightful accompaniment with fish and mushrooms.
“Junmai Daiginjo Ichiro” a delicate flowering-meadow aroma which best enjoys with light appetizers or by itself would be amazing too.
The Shusai Lunch Kaiseki is priced at MOP 580 per person or at MOP 760 with Sake pairing. This set is included Scallop with radish and liver of monk fish with Ponzu sauce, Soup with seasonal fish and autumn mushroom served in Dobin tea pot, Sashimi of two kinds seasonal fish, Hassun (autumn platter), Grilled Australian Wagyu beef with Miso on magnolia leaf, Sushi of grilled mackerel, and Persimmon and cream cheese with Sake lees from Dewazakura.
The Shusai Dinner Kaiseki is priced at MOP 1,580 per person or at MOP 1,930 with Sake pairing. This set is included Scallop with radish and liver of monk fish with Ponzu sauce, Soup with tile fish and autumn mushroom served in Dobin tea pot, Sashimi of file fish and thin sliced flat fish, Hassun (seasonal platter), Grilled Bungo beef with Miso on magnolia leaf, Sushi of grilled mackerel and cold Soba noodle with homemade sesame sauce, Persimmon and cream cheese with Sake lees from Dewazakura and chestnut with sweet potato and Maccha.
