Stories of the Seas Sixth Evolution at The Manor

The latest evolution of The Manor’s ocean-inspired special dinner menu has arrived with the release of ‘Stories of the Sea – The Sixth Chapter,’ featuring eight courses showcasing the finest selection of seafood sourced from the oceans around the world. 

Executive Sous Chef Michele Dell’Aquila has evolved the menu to highlight the best flavors of the season which are then matched to the highest quality seafood including the renowned Boston lobster, Blue Fin Tuna and Dover Sole.

“Our quest to present the finest of the sea from around the world continues with latest evolution of the Stories of the Sea menu, with its delicate balance of richly flavored seafood and exquisite flavorings elevating the dining experience even further,” Chef Michele said.

To start, Boston lobster is served alongside earthy flavors such as smoked artichoke heart, black truffle and asparagus, giving contrast to the inherent richness and sweetness of the lobster.

An intensely rich onion soup with oyster using sweet onions from Auxonne in France follows, garnished with the exclusive Sevruga caviar, with the strong sea flavors of the oyster and the caviar balanced by the sweetness of the onions.

Succulent Blue Fin Tuna from Balfegó Spain is dressed with taggiasche olive and anchovy pesto sauce and paired with handmade Vesuvius pasta and the classic cooler-climate Italian comfort food – stracciatella – to balance the creamy taste of the tuna.

The star of the Stories of the Sea menu is the tender and sweet flavored Dover Sole, served with mushroom, Dijon mustard and truffle to highlight its buttery flavor and tender texture, and served with creamed celeriac, couscous and an indulgent champagne sauce with a drizzle of tarragon oil.

The perfect dinner can be found with dessert IL Quadro – that features a bitter chocolate mousse with crumbly chestnut and tangy persimmon to balance the sweetness.

The Stories of the Sea – The Sixth Chapter can be elevated further with an optional wine pairing that features a carefully selected range of premium wines from France and Italy, match perfectly with ocean flavors.

Available now until 30 December, 2020. Stories of the Sea – The Sixth Chapter set dinner menu is available from 6:00PM – 11:00PM and priced at MOP888+* per person, or MOP1,288+* per person with the paired wine package.
