Every month, Galaxy Macau creates a series of limited edition dishes at its signature restaurants with the commitment to providing only the finest quality ingredients originating from the countries and regions that specialize in cultivating them to perfection.
 
Following the promotion’s successful debut in March, the second phase of promotion debuts from now until May 12, exploring an intriguing selection of global ingredients: morel mushroom from Lijiang, white asparagus from Germany and giant mottled eel from Indonesia, while the third phase follows from May 15 to June 9 and showcases the unique flavors of beef from around the world, bamboo shoots from China and black mussels from Australia. Among the six premium ingredients, the spotlight will shine on morel mushrooms from Yunnan during phase two and beef from around the world during phase three. Enjoy all of these delightful culinary treasures in a plethora of different styles at our world-class restaurants, and stay tuned for more surprises in the coming months.
 
Morel Mushrooms
 
The height of spring is the ideal time to enjoy the distinctive flavor and myriad nutritional properties of morel mushrooms, which are only in season from early April to mid-May. Galaxy Macau sources their Morchella Esculenta morels from Lijiang woodlands in Yunnan, where they are highly priced for their rareness and utterly inimitable flavor. A mix of smoky, earthy and nutty aromas with a unique springy texture, these mushrooms have provided endless creative inspiration for our chefs. In addition to their delectable flavor, morel mushrooms are considered one of the world’s healthiest foods. With eight different vitamins, plenty of protein and a surplus of the amino acids that our bodies crave, morels are known to help digestion, boost immunity, inhibit the growth of tumors, and balance the body’s qi. 
 
At Pak Loh Chiu Chow Restaurant, our talented chefs are serving up this prized ingredient in a luxurious Double-boiled Duck Soup with Fresh Abalone and Morel Mushrooms. The fresh fish simmers with the aromatic morels for nearly four hours, before being served in a potent, refreshing soup that can enhance immunity and improve eyesight. Terrazza Italian Restaurant, a Michelin-plate restaurant, explores morel mushrooms through a Mediterranean flavor palate in several dishes, including the Tortellini with Morel Mushrooms, Parmesan Sauce and Aromatic Herbs. Homemade tortellini pasta is packed with tasty morels, while the herbs of the creamy parmesan sauce enhance the mushroom’s natural earthy flavors.     
 
Beef from Around the World
 
Galaxy Macau further cements its reputation as a great dining destination in Asia by gathering only the finest cuts of beef from six different countries around the world: the US, Canada, Japan, Portugal, Australia and France. As every country has a different metric for measuring the quality of their meat, Galaxy Macau has conducted extensive quality checks to ensure that their discerning diners experience only the best. They have sourced delectable Prime beef from the US, a country whose rating system deems less than 2 percent of beef worthy of the “Prime” label, as well as Prime whole rib from Canada, which is known for having a firm texture, bright red color and richly abundant marbling.The renowned Miyazaki breed of Wagyu beef from Japan, meanwhile, is famed for its cherry red color, tenderness, and exceptionally high levels of snowflake-like fat marbling. The meat of Barrosã steak from Portugal is pink to dark red in color, and since the cattle are free to forage in the mountains, the meat is especially succulent and tender, with a unique flavor of international merit. Australian beef, specifically the Wagyu sourced by Galaxy Macau, is known for being slightly marbled, with an orange tinge to its red hue and a luxurious fat level thanks to its being grain-fed. The Charolais breed of cattle from France is known for its exceptional size (up to 900 kg) and snowy white fur. The famed “Label Rouge” brand of Charolais steak is extremely flavorsome, evenly marbled and tender.
 
Our master chefs cook and season each of the different cuts of beef in order to enhance their idiosyncratic flavors and natural textures. At Yoshimori Teppanyaki, our Japanese chefs focus on the Miyazaki Wagyu beef, which was voted the best “Japanese Black” and presented with the most honored “National Wagyu Award” by the Wagyu Registry Association in Japan. Their Miyazaki Wagyu Beef with Freshly Grated Wasabi and Sakura Salt has an aromatic, umami-rich flavor that dazzles the senses. The Apron Oyster Bar & Grill makes inspired use of another exceptional class of Wagyu, the Australian Tajima, with their Grilled Tajima Cube Roll, which is grilled to perfection with a delicate smoky finish. Widely considered one of the highest quality cuts of beef in the world, Tajima is renowned for its tenderness, distinctive marbling and silky, full-bodied flavor. Gosto, meanwhile, explores the Barrosã cut of steak, a high-quality free-range meat produced in northern Portugal, a peaceful and remote rocky mountain region. The Hot Stone “Barrosã” Steak with French Fries, the meat is cooked on a fiery hot stone at the ultra-high temperature of 400°C, which seals in all the juicy and flavor, rendering the meat extremely tender and bursting with a savory essence.
 
The other four ingredients featured in the two phases are also must-try items. With a reputation as the “vegetable prince”, white asparagus is so precious to Germany that the country holds a national asparagus festival every year. Its subtle bittersweet flavor and unique moon-colored hue makes it a divine addition to dishes like the Poached White Asparagus with Maltaise Sauce at Café de Paris Monte-Carlo. Prized in a variety of cultures around the world for its bold flavor and the unique texture of its skin rich in gelatin, the giant mottled eel boasts plenty of health benefits, from balancing qi to lowering blood sugar. The wild-caught eels served at Galaxy Macau are sourced directly from the freshwater lakes and rivers of Sumatra in Indonesia, and are ideal for Chinese and Japanese-style dishes. Bamboo shoots harvested in May from the Tianmu Mountains of China, whether braised, stewed, or stir-fried, hold many health benefits include clearing away excess heat and phlegm, aiding digestion, and replenishing qi. Sourced from the sparkling blue waters of Port Lincoln, Australia, black mussels are sought after by seafood lovers the world over due to their succulent plumpness and their strikingly fresh, clean flavor. These meaty, versatile shellfish are especially tasty when cooked with Asian-inspired flavors, like Stir-fried Black Mussels with Black Bean Sauce at Tasty Kitchen.
