Executive Sous Chef Michele Dell’Aquila, together with Karen Gaignon from EMW and aromatic fragrances from Valentino Beauty are ready to immerse luminaries into their co-produced romantic dining experience that will engage all their senses.
The Connoisseur’s Table — A Romantic Indulgence wine dinner with EMW, a leading importer, distributor and brand builder of wines in the Greater China market, and Valentino Beauty will take place from February 10 to 16, 2023 and treat guests to six-courses of exquisite wine and gastronomy. Take this opportunity to sample an array of premium wines selected by Karen Gaignon each exuding its own subtle, yet with sophisticated taste. Alongside some of the world’s best wines, guests can also savor the distinctive seasonal dishes curated by Chef Michele, and receive a unique gift set from Valentino Beauty.
A spotlighted dish for this romantic voyage includes the Brittany Lobster with dashi terrine, almond and vanilla oil. This intricately sweet and smoky dish is a beautiful complement to the Ferrari Perlé Rosé Trentodoc, Trentino-Alto Adige, Italy, 2016 or Ferrari Perlé, Trentodoc, Trentino-Alto Adige, Italy, 2015 wines, adding a smooth texture to the flavor profile of the lobster and designed to satisfy true connoisseurs.
Prepare to be captivated by other gourmet delights such as the Frédéric Poupard White Asparagus with Hokkaido scallop and trumpet mushroom; Pinched Agnolotti with New Zealand scampi, asparagus and seafood emulsion; as well as the Turbot Millefeuille with celeriac, green pea, sea urchin and cherry blossom. Each beautiful dish is paired with meticulously selected wines such as the Craggy Range Te Muna Road Vineyard Sauvignon Blanc, Martinborough, New Zealand, 2022 and AIX Rosé, Coteaux d'Aix-en-Provence, France, 2021 to name a few.
A notable main is the Australian Wagyu Beef Sirloin M7 with beetroot, baby carrot and Bordelaise sauce. With a rich, velvety taste, the sirloin is complemented by Château Haut Bages Monpelou, Pauillac, Bordeaux, France, 2017 for an overall powerful profile and finish.
The romantic gastronomy journey concludes with the delicate Domori Chocolate with raspberry, vanilla crumble and strawberry ice cream. The rich dessert is paired with Broadbent 10 Years Old Malmsey, Madeira, Portugal. Aged in oak casks for at least 10 years, the superb, full-bodied, wonderfully rich Madeira is sweet, with a rich chocolaty flavor and a concentrated bouquet.
