This summer, Lai Heen presents a bespoke tasting menu bringing meticulous Cantonese cuisine to new pinnacles – as can only be experienced from Macau’s sky-high Chinese restaurant, located on the 51st floor of The Ritz-Carlton, Macau. While soaking up the expansive views over Cotai Macau, guests can enjoy Lai Heen’s scrumptious Summer Degustation Menu; crafted from a carefully selected variety of the freshest seasonal seafood, shellfish, poultry and vegetables.
The eight-course tasting experience features remarkably inventive creations, including Organic Cauliflower with Truffle; Crispy Garoupa with Egg Yolk; Braised Pork Belly with Hawthorn and Dried Plum; Wok-fried French Blue Lobster, Scampi with Egg White in Crispy Nest; and Chilled Almond Tofu with Taiwanese Mango.

- The Land of Punt: A unique flavor combination inspired from ancient Egypt. Olibarnum-infused Monkey Shoulder whisky is paired with a homemade date and sumac reduction and fresh lemon, then topped with a homemade Arabic coffee soda and Cassia wood.
- Historic Hysteria: Inspired by Chinese medicine and local flavors, this historic drink uses 20-year-old tangerine skins and husks of silk tree flower from a local medicine store to flavor the vodka, rounded out with tamarind and clear watermelon juice.
- Panchamrit: The Ritz-Carlton Bar & Lounge mixologist Suman brings this recipe from his hometown in Nepal, mixing a special Nepalese concoction with fresh pineapple, Swedish Punch, dry orange curacao and rum; served in a special bamboo cup.
- Pink Cadillac: Named for Havana, Caribbean’s famous cars, it features Caribbean Rum, fresh pomegranate seeds and lime husk, vanilla, cream, milk and yellow Chartreuse liqueur. Clarified together and filtered, the result is a beautifully clear pink cocktail that’s both rich and dry.
