The Parisian Macao’s signature French bistro Brasserie will present a special five-course dinner menu from Nov. 1 to Dec. 15, 2021 as part of the French Beef Festival taking place in Macao and Hong Kong.
Dedicated to showcasing delicious and timeless French cuisine, Brasserie has earned a reputation for the most authentic culinary experiences. Daniel Brolese, Brasserie’s Executive French Chef, has crafted a menu featuring top-quality tender and flavourful Charolais beef. This renowned breed is native to the Charolais area surrounding Charolles in Saône-et-Loire, eastern France. Celebrating secondary beef cuts such as oxtail and cheek, dishes yield sublime flavour and mouthfeel.
Diners can enjoy an amuse bouche of Marennes oysters with a beef essence jelly, and an appetiser of crispy oxtail and boudin noir sausage on cauliflower ‘couscous’. A delicate beef consommé flavoured with Madeira wine incorporates exquisite duck foie gras flan with poached morel mushrooms, while main course of beef cheek is slow-cooked and served in puff pastry with sautéed wild mushrooms. Dining is elegantly rounded off with hazelnut praline mousse or selected cheeses. The menu is priced at MOP 548* per person. Exceptional wines have been selected to pair with the menu, with wine pairing starting from MOP 188*.
This year’s French Beef Festival, entitled ‘French Beef: A Taste of Terroirs in Hong Kong & Macau’, is the fourth edition of the popular event. It aims to promote the distinctive flavour and quality of French beef to consumers in Macao and Hong Kong through a dedicated marketing campaign with participating restaurants and shops.
