Two-Day Gourmet Showcase by Chef Yang Yanbin from Hokkien Cuisine and Chef Homan Tsui at Imperial Court

MGM continues its acclaimed “Gastronomic Journey with Star Chef” series with another extraordinary culinary collaboration, further reinforcing Macau’s reputation as the Creative City of Gastronomy. Starting from April, MGM’s culinary team will join forces with renowned Chinese celebrity chefs to craft dining offers in Macau under the theme of ‘Maritime Silk Road Culinary Art Feast’, taking diners on an epicurean journey throughout Quanzhou, Ningbo and Guangzhou, as well as the cultural and economic hub of the Maritime Silk Road, Beijing, as the finale. As one of the birthplaces of Fujian regional cuisine, Quanzhou was also the historical starting point of the Maritime Silk Road. Between April 11 and 12, Chef Yang Yanbin, Executive Chef of Hokkien Cuisine Restaurant, will collaborate with Homan Tsui, Executive Chef – Chinese of MGM MACAU, to craft a special menu that celebrates a clash of Lingnan and Fujian regional traditions, with modern artistic flair at Imperial Court of MGM MACAU.

Chef Yang Yanbin, a Quanzhou native who has been awarded the Michelin Young Chef Award 2024, is the chef-owner of the renowned Hokkien Cuisine Restaurant in Chengdu, Sichuan. Being awarded with one Michelin star and one Black Pearl Diamond award on 2024 and 2025, Chef Yang masterfully blends traditional Fujian flavors with Sichuan’s local ingredients, paying tribute to Quanzhou’s culinary heritage through innovation. Meanwhile, Chef Tsui from MGM demonstrates masterful artistry in his interpretation of Lingnan cuisine, elevating traditional handmade dishes through refined technique and thoughtful innovation. This collaboration represents a harmonious blend of their culinary philosophies. Together, they create a remarkable gastronomic feast that celebrates both cultural heritage and contemporary artistry, narrating the stories of culinary evolution.

The four-hand menus are highlighted by spices, artisanal cooking techniques, and tea culture, offering guests a unique dining experience that blends history, culture, and culinary art from Quanzhou to Macau. Showcasing the geographical characteristics of Quanzhou to Macau, the sensory dining experience begins with appetizer platter to showcase the fresh coastal ingredients such as the purple seaweed and yellow croaker from Quanzhou, alongside dried oysters from Guangdong. For the main course, the menu highlights the signature dishes from Chef Yang, including the acclaimed Braised Sea Cucumber with Ginger and Steamed Blue Lobster with Satay Sauce. On the other hand, Chef Tsui, who led Imperial Court to earn its Black Pearl One-Diamond recognition, will present dishes such as the Double-boiled Sea Whelk Soup with Fresh Yellow Fungus and Seaweed and Fried Glutinous Rice with Termite Mushroom and Chinese Preserved Meat, delivering a delicate balance between traditions and innovation of Lingnan culinary art. The desserts Sweetened Rouge Guava Soup with Basil Seed is a reinterpreted version of the classic mango pomelo sago, while the Baked Pepper and Sesame Pastry comes with a slightly spicy twist to the Cantonese favorite.

The two-day gourmet showcase by Chef Yang Yanbin and Chef Homan Tsui will be taken place on April 11 and 12 at Imperial Court, with a six-course lunch menu and an eight-course dinner menu priced at MOP1,800* and MOP2,800* per guest respectively.
