‘The Connoisseur’s Table — The Flying Winemaker Wine Dinner’ will take place on March 9, 2023 and treat guests to a bespoke menu crafted by Chef Michele as well as a selection of aromatic and true-to-varietal wines. Prior to the exquisite gastronomy journey, guests are treated to the Prosecco Brut, King Valley, Australia, N.V. as a welcome drink designed to open up the senses. Featured menu highlights include the Reblochon Tortelli, complemented by Eddie McDougall’s Little Pig Rosé, Margaret River, Australia, 2022, the wine inspired by a precious memory between Eddie and his grandmother (“po po” or “婆婆”). Born in the Year of the Pig, Eddie grew up in Hong Kong and would fondly be called “Little Pig” (“豬仔”) by his grandmother. This fresh and tantalizing rosé pays tribute to his cherished grandmother.

 

Another highlight is the Hokkaido Scallop, complemented by Sauvignon Blanc, Wairarapa, New Zealand, 2021, a wine that is bright and inviting on the nose with citrus and herb notes. Upon each sip, guests will be greeted by a wine that is energetic and crisp with concentrated tropical flavors that lead to a long, vibrant, and salivating acidity that is tightly wound and intensely structured.

 

For a palate change, guests will be introduced to the Pinot Noir, Wairarapa, New Zealand, 2019 that enhances the flavor of the Acquerello Risotto. This wine shows a great degree of elegance with plum notes, smoky toast, and dried herbs. On the palate this wine is dense with red fruits, but also tightly woven displaying terrific cherry notes, and finishes with soft tannins. Continuing on the journey is the Wagyu Beef Cheek paired with the Cabernet Sauvignon, Margaret River, Australia, 2019 for a well-rounded flavor profile. The firm tannins with full and rich taste, including notes of blackcurrant, as well as woodsy flavors, such as cedar, oak, and herbs make the Cabernet Sauvignon a perfect match to the Wagyu.

 

With each wine meticulously selected to pair with each beautiful dish, prepare to be captivated with more gourmet delights and end on a decadent finale of Valrhona Dulcey with pistachio sponge, vanilla chantilly and hazelnut ice cream.

 

‘The Connoisseur’s Table —The Flying Winemaker Wine Dinner’ is available on March 9, 2023 from 7:00PM and is priced at MOP1,888+ per person. This exquisite set dinner menu will be available from March 10 to 15, 2023, priced at MOP1,388+ per person or MOP1,888+ per person with wine pairing.
