Then, he illustrates his wealth of skill with the Crispy Fried Yellow Croaker Fish with Vinegar Sauce, a technical dish which requires meticulous deboning and culinary skill to craft the perfect crisp and moist. Keeping health in mind, the Stewed Fresh Abalone with Truffle Sauce combines the antioxidant oatmeal and the fresh abalone for an ultimate umami balance. Inspired by his travels, Chef Ken Cheung created the melt-in-your-mouth M5 Wagyu Beef with Teriyaki Sauce, infusing east-meet-west element into his creation. Last but not the least, an authentic Cantonese meal is not complete without a chicken dish and barbecued pork.
