Yamazato Kaiseki set-lunch includes: Spinach with Chrysanthemum and Lightly Seared Barracuda Crown Daisy Seasoned with Sesame, Conger Pike with Ginko Nuts in Dobin Teapot, Two Kinds of Seasonal Sashimi, Grilled Pacific Saury with Sudachi Sauce, Simmered Turnip with Yuzu Miso Sauce, Stearmed Rice with Salmon and Sweet Potato and seasonal fruits.
Eigetsu Kaiseki set-dinner includes: Spinach with Chrysanthemum and Lightly Seared Barracuda Crown Daisy Seasoned with Sesame, Conger Pike with Ginko Nuts in Dobin Teapot, Two Kinds of Seasonal Sashimi, Grilled Pacific Saury with Sudachi Sauce, Pan-fried Wagyu Beef Patty with Special Maitake Mushroom Sauce, Simmered Sea Bream and Turnip with Yuzu Miso Sauce, Steamed rice with Salmon and Sweet Potato, Seasonal Fruits and Tsukimi Dumplings with Macha.
The highlight dish for both Kaiseki set-meals is “Grilled Pacifica Saury with Sudachi Sauce”. It is one of the most well-known seasonal fish representing autumn season in Japanese cuisine. Fish is usually salted and grilled whole even with intestines intact, and served with Sudachi sauce to intensify the flavor of the fish.
