Yamazato teams with Kariho Sake Brewery (Akita Seishu Co., Ltd.) to host “Culinary Delights” April 5 – May 5. Kariho Sake Brewery was established in 1850 and it is located in Akita’s rice basket.  The Sake was names Kariho based on the Waka (traditional Japanese poetry) which was written by the Tenchi Emperor. The Waka shows respect for the farmers who work hard to cultivate the rice fields and it is very meaningful for Sake producers.

Akita Prefecture is located in the northern Tohoku Region of Japan facing of the Sea of Japan to the west; it is bordered by four other prefectures: Aomori in the north, Iwate in the east, Miyagi in the southeast, and Yamagata in the south. Akita depends heavily on agriculture, with the climate being ideal for growing rice of exceptional taste. “Akita Komachi” and “Yume Obako” are two strains of rice that are grown exclusively in the prefecture and delivered throughout Japan. Three important elements in Akita combine to produce Japan best sake: its rice, its quality water and its passionate sake brewers.

From April 5 to May 5 – Guests can enjoy four options: (1) Akita Kaiseki Set-Lunch priced at MOP 580 per person or (2) at MOP 730 with the Sake Pairing and (3) Akita Kaiseki Set-Dinner at MOP 1,580 per person or (4) at MOP 1,830 with Sake Pairing.

The highlighted dish for lunch is “Grilled Scallop with Miso” in Akita style and local people call it “Kayaki”. The highlighted dish for dinner is Kiritanpo Hot Pot. “Kiritanpo" is a traditional dish of Akita made from freshly harvested rice and is popular in the Tohokou region. “Kiritanpo” is delicious eaten by itself but is even more enjoyable when added into nabe, a Japanese hot pot dish with Yamazato’s homemade “Shottsuru” sauce made from sandfish. People in Akita usually eat Kiritanpo from September to late March, during the harvest season. The unique name comes from its shape, which looks like a spearhead.

Sake selected to pair with Yamazato’s food for lunch and dinners are: Kariho Junmai Daiginjo Ginsenju – A Junmai Daiginjo Ginsenju its aged in bottle in a low temperature, very delicate on the palate and round with swelling fruitiness. Kariho Daiginjo – Kariho Daiginjo is super-premium sake made from Yamadaishiki and Miyamaishiki rice, it has a pleasant taste, mild flavor and persistent aftertaste. Kariho Junmai Ginjo Rokushu – A unique collection of aromas from rice and grains to berries and touch of mint and the four hot words are Crisp, Dry, Even and Drinkable. Kariho Junnai Junkei Krakuchi 80 – it is refined sake produced from “Akita Komachi rice” which is known for its purity, soft and mellow rice umami flavor.
