Festive French Flavors at The Ritz-Carlton Café 

The magic of wintertime in Paris is coming to life at The Ritz-Carlton Café! From 24 December to 1 January, indulge in the Buffet de Gourmandise, which begins with a merry welcome drink or glass of champagne, along with unlimited coffee and tea. Guests can relax and indulge in savory choices inspired by the flavors of the winter season, such as Cherry Marinated Salmon, Salmon Mousse, Toast; and Sousvide Turkey Breast, Cranberry, Bread. To welcome the festivities, the chef has designed an assortment of enticing Christmas confectionaries including Festive Traditional Chocolate Yule Log, Christmas Cookies and Mince Pie.

From 23 December to 25 December, The Ritz-Carlton Café will host an intimate Christmas Brunch, with buffet selections carefully curated to mark the celebratory occasion in style. Sample a variety of fresh seafood on ice, including French Oysters and Nage Marinated Prawns, and continental antipasti such as Chorizo, Pata Negra, Smoked Salmon, Salami. At the live station there will be Grilled Maine Lobster accompanied by Champagne Sauce and Smoked Beef Short Ribs with crème de Cassis Glaze. At the carving station, a team of chefs will serve up rich and tender meats such as Roasted Whole Turkey and Thyme Roasted Lamb. To finish, a chef’s selection of artisan cheeses and a variety of seasonal desserts will complete the satisfying meal. 

The Christmas festivities carry on into the evening, with a Menu de Noël for dinner carefully crafted by the esteemed chefs of The Ritz-Carlton Café. Guests with a discerning palate for French delicacies will adore this six-course Christmas menu, which includes entrees of Chicken Consommé, Chicken Breast, Baby Carrot, Chestnut and main course of Poached Lobster, Parsnip Purée, Fava Beans, Tarragon Lemon Foam. The lavish menu finishes on a sweet note, with a traditional Chocolate Yule Log Cake served with Hazelnut Crisp and Salted Popcorn Ice Cream. 

The celebrations continue on 31 December and 1 January, when guests are invited to welcome the New Year with a tempting set lunch menu at The Ritz-Carlton Café. The three-course menu offers an array of fine French dishes to choose from showcasing the best of brasserie dining, along with a dessert buffet. Notable highlights from the New Year’s set lunch menu include Warm French Crepes with Ham, Cheese and Mushroom, Pan-Seared Duck Breast with Beetroot, Couscous, Smoky Eggplant, Goat Cheese and Crème de Cassis, and a variety of unlimited lavish French desserts.

For guests desiring a dash of decadence and glamour, the delicate Le Menu de Fête is sure to satisfy everyone. This sophisticated seven-course New Year’s dinner menu uses traditionally festive ingredients in innovative ways, with delicacies such as Cauliflower Chantilly, Caviar, Black Ink Slow Cooked Scallop and Lobster Bisque with Britany Blue Lobster. To follow, diners can feast on tender and succulent cuts of Wagyu Beef or Poached Chicken Breast; and finish off with a rich Dark and White Chocolate, Chestnut Mousse, Mango Passion Coulis and Chocolate Sorbet. 

 

Haute Cuisine for the Holidays at Lai Heen 

Revel in an enchanting holiday season at the Michelin-starred Lai Heen, exemplifying the highest degree of service and artistry in luxury Cantonese dining. This year, guests will enjoy exquisite culinary delights, as the esteemed chefs at Lai Heen create two inventive degustation dinner menus highlighting refined Chinese dishes that incorporate seasonally inspired flavors across the globe. 

The Christmas Degustation Menu consists of 8 unique interpretations of Chinese haute and fusion cuisine, including sumptuous choices such as Barbequed Iberico Pork in Honey Sauce, Pan-Fried Australian Lobster in Mullet Roe Sauce and Roasted Venison in Red Wine Sauce. A carefully curated wine-pairing menu of exclusively French selections will complement various courses, including a 2013 Château Calon Ségur Saint-Estephe from Bordeaux, France and the always effervescent Perrier-Jouët Grand Brut Champagne. 

New Year’s Eve at Lai Heen promises to be an unforgettable evening, as skilled Lai Heen culinary talents serve up an array of authentic and extravagant Chinese dishes such as Simmered Garoupa Fillet with Bird’s Nest in Fish Broth, Pan-Fried Hokkaido Scallop with Purple Potato in Sweet and Sour Sauce and Braised Whole Abalone 150 Grams, Goose Liver. Renowned amongst sophisticated gourmands, a glass of Louis Roederer Cristal Champagne is included, to give a sparkling start to the New Year. 

 

Winter Cocktails & Countdown Celebrations at The Ritz-Carlton Bar & Lounge 

A warming selection of winter cocktails are on exclusive offer at The Ritz-Carlton Bar & Lounge, just in time for Christmas. Make a toast – and get toasty – with an Irish Coffee, made with Jameson Irish whiskey, fresh hot black coffee, and a hint of sugar and cream. The Blue Blazer will awe adventurous cocktail lovers with its creative concoction of premium American bourbon, pineapple rum, Grand Marnier, lemon ginger honey and Earl Grey tea. Mixing up a sweet and aromatic take on the Christmas classic, The Ritz-Carlton Bar & Lounge also invites guests to cozy up over a steamy cup of Mulled Wine with spiced cognac, Shiraz and orange. 

On New Year’s Eve, guests are invited to start the celebrations early at The Ritz-Carlton Bar & Lounge for a New Year’s Eve Pre-celebration from 5:30-8:30pm on December 31. The Pre-celebration package includes savory barbecue skewers, cheese platter, and free flow of red wine, white wine, sparkling wine and mixers.

The countdown party kicks off in earliest from 9pm on New Year’s Eve, with the fabulous “New York, New York” celebration at The Ritz-Carlton Bar & Lounge. Inspired by the glitz and glamor of the city of lights, guest can sip on fine champagne and signature cocktails while snacking on canapés inspired by classic American cuisine. Sensational performances will keep the mood lively all night long, with a swinging jazz band, entertainers and DJs. Come midnight, everyone will be making magical memories as they usher in 2019 with good cheer and clinking champagne glasses. 

 

Rejuvenating Remedies at ESPA at The Ritz-Carlton, Macau
