“SJM” will present the “Chefs’ Table: A Symphony of Senses – Don Alfonso 1890 | HOMMAGE | CHAOYUE” from 23 to 25 May 2025 at Don Alfonso 1890, its acclaimed fine-dining Italian restaurant at Grand Lisboa Palace Resort Macau. Three celebrated chefs from Don Alfonso 1890, Tokyo’s two-MICHELIN-starred French restaurant HOMMAGE, and Guangzhou’s contemporary Teochew restaurant CHAOYUE, will showcase Italian, French and Chinese culinary excellence to gourmets.

Don Alfonso 1890 brings the culinary excellence of its MICHELIN-Starred, family-owned counterpart in Italy to Macau. Helmed by Head Chef Federico Pucci, the restaurant expertly blends traditional Italian techniques with innovative creativity. Ingredients are sourced from the family’s organic farm, Le Peracciole, ensuring unparalleled flavours. The restaurant earned a Five-Star rating from the 2025 Forbes Travel Guide.

HOMMAGE, one of Tokyo’s most revered two MICHELIN-starred restaurants, is led by Owner and Executive Chef Noboru Arai, whose philosophy of simplicity, clarity and precision bridges classical French techniques with Japanese sensibilities.

CHAOYUE, spearheaded by Chef Chen Xiaodong, co-founder and executive chef of the “YUE” restaurant group, reinterprets traditional Teochew cuisine through a contemporary lens. Named one of “Forbes China 30 Chefs,” Chef Chen balances tradition with innovation to breathe new life into classic Chinese flavours. CHAOYUE has received accolades including a MICHELIN-Selected restaurant and the Black Pearl Restaurant Guide One Diamond award.

This special collaboration features a six-course menu, including Handmade Pici Pasta Aglio and Olio style, XO Sauce and Sea Snails with Tangerine Peel 15 Years, and Grilled Amadai Tilefish charred Tomato and Sea Shell buillon.
