To celebrate the New Year, from 21 to 23 February, Head Chef Luo Qilong of Guangzhou’s “Yong” and Head Chef Ken Chong of SJM’s “Palace Garden” will collaborate on an 8-course menu expertly blending the bold flavours of Sichuan cuisine with the delicate elegance of Cantonese cooking, showcasing the finest elements of each cuisine, perfectly interpreted through a curated exploration of Chinese culinary heritage.


Ken Chong, Head Chef of “Palace Garden” and a disciple of the authentic Taishi culinary tradition, brings nearly 20 years of experience to his craft. He adheres to traditional techniques while boldly innovating, elevating exquisite dishes with meticulous skill. The restaurant has been awarded a Five-Star honour by the Forbes Travel Guide and a One-Diamond rating by the 2025 Black Pearl Restaurant Guide.
Head Chef Luo Qilong of “Yong,” renowned for his mastery under the guidance of Executive Chef Lan Guijun, strives for three fundamental principles of authentic Sichuan cuisine: “natural flavours,” “fermented flavours,” and “blended flavours.” These philosophies shine through in his dishes. The restaurant earned a MICHELIN Star for two consecutive years in the MICHELIN Guide Guangzhou and was awarded Guangzhou’s very first MICHELIN Green Star in 2024.
Featuring a culinary masterpiece of eight exquisite dishes, the “Chefs’ Table: A Symphony of Senses – Palace Garden | Yong” includes the “Peony King Prawn in Kung Pao style,” a collaborative dish created by the two esteemed chefs. Other highlights include the “Amidor Abalone braised with Giant Garoupa Skin and Pomelo Peel,” and “Bean Curd and Wagyu Beef stewed in Mapo style with Rice.” The dinner is priced at MOP2,988+ per person, with optional premium wine pairing for an additional MOP1,200+ per person.
