In a continued effort to further build on Macau’s status as a ‘Creative City of Gastronomy’, MGM is pleased to present the latest lineup for the ‘Gastronomic Journey with Star Chefs’ series of 2025, where two Michelin One-Star chefs from Aji of MGM COTAI and Arcane in Hong Kong exclusively join hands for the first time from May 9 to 10. Together, Chef de Cuisine Pan Sihui of Aji and Chef-owner Shane Osborn of Arcane will thoughtfully craft a limited-time ‘Aji x Arcane’ starry four-hands culinary journey, where Chef Pan’s refined French techniques and Asian soul meets Chef Osborn’s respect for fresh seasonal produce and minimalist elegance.




A native of Perth, Chef Osborn became the first Australian head chef to obtain Michelin-star status at the age of just 29. Under his leadership, Pied à Terre in London garnered one Michelin star in 2001 and further elevated the restaurant to two Michelin stars in 2003. After more than a decade in the United Kingdom, Chef Osborn moved to Hong Kong where he opened Arcane in 2014. In just a few short years, Arcane achieved its first Michelin star in 2017 and has successfully retained its Michelin status for nine consecutive years. Chef Osborn was also the 2018 Finalist on the popular Netflix cooking competition – The Final Table – which propelled his career even further. Most recently in 2021, he launched The Arcane Collective, a group of independently minded restaurants which embrace his culinary philosophy of being ingredient-driven and unpretentious as well as socially and environmentally aware.
For this very special Michelin-starred four-hands collaboration, where French finesse meets Eastern gastronomic philosophy, Chef Pan and Chef Osborn have meticulously curated 6-course lunch and 8-course dinner tasting menus to highlight the culinary backgrounds of their homes in Singapore and Australia. The two chefs put their creative minds together to co-create a special sauce made of Sambal Jam from Singapore and Vegemite from Australia to enliven their main courses – Antarctic Toothfish for lunch and Kinki Fish for dinner. Most importantly, Chef Osborn will bring his famed signature dishes from Arcane to Macau, including the 7+ Mayura Wagyu Rump Cap and his highly sought-after dessert, Yuzu and Lemon Posset. To showcase the innovative “Asian Bistronomy” concept of Aji, Chef Pan will also create his very own King Pigeon dish which combines the French culinary technique of ballotine (deboning poultry) and the Cantonese hang-dried technique of creating crispy skin.
Exclusively available at Aji of MGM COTAI between May 9 and 10, the 8-course starry dinner menu by Chef Osborn and Chef Pan is priced at MOP 1,888* per person, while the 6-course collaborative lunch menu is available only on May 10 at MOP 1,288* per person. To elevate the dining experience, wine pairing options are available at MOP 550* per person for lunch and MOP 750* per person for dinner.
