Prepared by the banquet and in-room dining kitchen overseen by Banyan Tree Macau's Chinese Head Chef Mr Choi Sek On, the Chinese banquet is full of surprises. One of the highlights is definitely the Crispy Yam, Scallop, Homemand Sweet Chilli Sauce. While it may look like a dish you will find in an ordinary yum-cha, its crispy and soft texture is going to exceed your expectations. The scallop inside remains juicy even after the frying process. And the onion slices under it serves more than just being a decoration, but also adds an extra layer of flavour to the dish.
Another must-try dish is the Double Boiled Chicken Soup, Fish Maw, Chinese Ham. The aroma of the chicken soup will occupy your sense of smell once you open the lid of the soup bowl. The fish maw inside is full of flavour and has an interesting gelatinous texture. Chef Choi says that it takes up to three days and a lot of effort to prepare the fish maw and a soup that is as delicate as this.
