With a lifelong passion for cooking, renowned Portuguese chef José Avillez has been delighting diners with his unique haute cuisine that combines the traditional and the avant-garde, whilst maintaining authentic Portuguese flavours.
Mandarin Oriental, Macau welcomes Chef José Avillez back to Vida Rica Restaurant for a feast of gourmet delicacies from 17 to 19 March 2015. Having won a second Michelin star this year for his Belcanto restaurant in Lisbon, his new interpretations of Portuguese cuisine, based on traditional recipes with contemporary inspirations, are sure to delight.
Diners are invited to savour Chef Avillez’s six-course degustation dinner menu, featuring dishes such as low-temperature smoked egg yolk, pea stew purée, pancetta and Périgord truffle; beef oxtail with foie gras, chickpea, and onion purée with Nisa cheese; and lemon-lime globe (priced at MOP1,288* per person).
You can also embark on a taste journey with his four- and five-course lunch set menus at MOP398* and MOP498* per person, respectively. All menus offer a choice of wine pairing with selected vintages from Portugal.
Considered one of the best Portuguese chefs of his generation, Avillez’s enterprising spirit and willingness to push boundaries has already earned him a place in culinary history. With six restaurants in Portugal, five in Lisbon and one in Oporto, the Chef’s entrepreneurial nature has seen him branch out in a number of different directions. He has launched JA wines, bearing his signature, and is the author of bilingual best-selling cookbooks, and has also contributed to countless Portuguese and foreign books. Further to his impressive output he has also authored and hosted highly successful TV and radio cooking shows, and has worked with and trained under big names such as Eric Frechon, Alain Ducasse and Ferran Adrià at El Bulli.
In the summer of 2011, Chef José took an interest in Belcanto restaurant in Chiado, Lisbon and began an extensive refurbishment. He re-opened the restaurant in the beginning of 2012, totally reburbished and was awarded a Michelin star within a year of its opening. In 2014, Belcanto restaurant received a second Michelin star, becoming the first restaurant in Lisbon to be distinguished with two Michelin stars, with Chef José being the first Portuguese chef to obtain this honour in Portugal.
