The inspiration of the lion at MGM goes beyond visual and performance art, even influencing the art of culinary delicacies. MGM is inviting all food-lovers on a delicious lion-inspired journey through the beautiful traditions of Lingnan where Chinese lion dance originated. From Imperial Court and Chun’s expertly prepared Cantonese delicacies, to Bar Patuá’s specialty cocktails and Anytime’s impressive selection of lion-themed desserts, each dish is specially prepared to guarantee an experience of decadence.
Until the end of the year, the MGM Awakening Lion Sugar Crush will be available at Anytime, located at the heart of the Spectacle. Guests can indulge their sweet tooth and pick their favorites from an extensive array of all-you-can-eat lion-themed desserts and snacks. Pastry Chef Neo Ng incorporate dry-aged mandarin peel, a much-loved Lingnan ingredient, together with black and white sesame and Western ingredients like cinnamon for the decadent lion-themed macarons. And be sure to check out Chef Ng’s two impressive edible lion dance sculpture showpiece taking up the center stage of the Sugar Crush counter, which took three chefs a total of 168 hours to complete.
Meanwhile, Chef Alex Lau, head of the Dim Sum menu at Cantonese restaurants Imperial Court and Chún, has created a delicious bun in the form of lion head, inspired by traditional lion dances. The colourful and intricate details surrounds a sumptuous vegetarian filling infused with the citrus flavour of aged tangerine peels from Xinhui in Guangdong province.
Bar Patuá’s manager Paul Zhang adds to the Awakening Palate festivities with his special Lion Cocktail. Zhang pairs lychee, the most beloved fruit from Lingnan, with Shiwan Yubing Shao, a rice wine specifically from the region. The Lion Cocktail is embellished with lemon, lemongrass and the richness of the lychee, culminating in a delicate balance of sweet and sour – a locally inspired cocktail, deeply connected to the rich culture in the region and the perfect complement to the hot summer months.
Shunde is famous for being the birthplace of Cantonese cuisine, and like Macau, has been given the honorable title of UNESCO Creative City of Gastronomy. Earlier this year, MGM’s two Cantonese restaurants Imperial Court and Chún each presented a menu of classic Shunde specialties to Macau locals. Imperial Court’s Chef de Cuisine Homan Tsui presented dishes like the crunchy and tender “Crispy fried foie gras rolls with caul fat and shrimp mousse” and the golden-crusted “Baked crab with sliced dough stick and garlic”.
At Chún, Executive Sous Chef of Chinese Kitchen Tam Yim Chan created dishes that encapsulate the traditional taste of Shunde food, such as the mellow and delightfully rich Stir-fried dace fish noodle with milk and the freshly sweet Deboned carp fish soup with angled loofah, black fungus and olive seeds in Shunde style.
And Lion inspired dining will continue in October as MGM Macau’s Aux Beaux Arts celebrates the culinary traditions of Lyon, with a sumptuous special menu inspired by the famous ‘City of Lions’.
