Hotpot Heaven

Since its soft opening in July, Grand Lisboa Palace has become a big hit with local foodies, and without doubt one of the most popular new restaurants is the famous Wulao Taiwanese hotpot. 
 
Founded in 2009 in Taiwan, Wulao has become a highly sought-after hotpot brand in Greater China, with its “Fairy Peach-blossom Village” ambience and signature secret broths and ‘ice-cream’ tofu.  This is first-ever exclusive branch of Wulao in the Macau and Hong Kong region, and not surprisingly you currently need to book well in advance if you want to get a table. 
 
The impressive decor and comfortable setting allows guests to enjoy and appreciate true Taiwanese gourmet hotpot cuisine, accompanied by Wulao’s attentive service and rituals. The restaurant uses the freshest ingredients and products imported directly from Taiwan, including those used in the secret recipes for the signature Layered Tofu and Spicy Wulao Broths, to ensure that each meal represents the unique and authentic flavours for which it is renowned.
 
“At the moment, no one can travel, and this is a very popular hot pot from Taiwan,” notes restaurant manager Eric Chu.  “We have two signature broths.  The Layered Tofu broth is made from a base using chicken bones, pork bones, onion, carrot and turnip, ginger and garlic plus a number of healthy Chinese herbs.  The Spicy Wulao broth adds some extra herbal flavouring agents for a rich and unique flavour.”
 
Add in some Boneless Short Rib, assorted handmade meatballs and egg dumplings together with a cold Taiwan Beer, and you have a very satisfying meal to share with friends and family.
 
After your meal, you can finish your evening out with an amazing cocktail at the bar at Mesa.  The Portuguese restaurant is not fully operational yet, but the bar is welcoming guests every night.
 
Talented Master Mixologist Nokoy Mak has created 12 fantastic new bespoke cocktails, all inspired by Macau’s UNESCO heritage sites and historic buildings.  With names like Patron Saint, Rose Mary, Big Entrepreneur, Portuguese Rhyme and All-In, these chic drinks will take you on a voyage through Macau’s history and culture with a variety of delicious flavours.  When Nokoy creates a cocktail, he likes to be inspired by concepts that are related to where the cocktail is created, be it a specific colour related to that location, or a special ingredient.
 
 
“I’ve worked my whole life in Hong Kong so this is my first job in Macau, but actually I’m Macanese, so I was thinking now I should do something more focused on Macau,” notes Nokoy.  
 
Last Back Garden is a Jasmine infused Gin cocktail served in an eye-catching bird-shaped glass, with Swallow’s Nest water, Wolfberry Rock Sugar syrup and mint.  
“This concept is inspired by the small village areas of Macau, very comfortable places to go and relax and sit, with some birds flying around.  They are quiet places separated from the crowded city and that’s the feeling you get when you drink this cocktail,” Nokoy explains.
 
Mesa’s interior was designed by Karl Lagerfeld and features a bold, blend of contemporary design and oriental inspiration with geometric patterns, shapes, and lines in black, white and gold all stylishly infused with elements from the East.
