Grand Lisboa Palace Resort Macau (“Grand Lisboa Palace”) is pleased to announce that its luxurious Cantonese restaurant Palace Garden will open on 1 December, presenting an elevated dining experience for all gastronomes.
This opulently designed restaurant offers a menu of authentic Cantonese haute cuisine made with prime ingredients, and prepared by an experienced culinary team whose master can be traced back to Jiang Taishi, an accomplished scholar who was also known as the “first man of the hundred Cantonese foods” from the Qing dynasty. Inspired by ancient imperial gardens, the restaurant's design, interior décor and art celebrate the magnificent Chinoiserie period of China’s trade history.
Tracing the Origin; Cantonese Fine-dining Richness
Led by Head Chef Ken Chong, Palace Garden’s menu comprises of refined farm to table Cantonese cuisine. Through the spirit of “perseverance with tradition and innovation”, and his many years of experience working around the world, Chef Ken integrates western ingredients into traditional Taishi dishes, reinterpreting the flavours of palatial Cantonese cuisine.
Menu highlights for Palace Garden include Premium Partridge Bisque, a dish made with a long-standing secret recipe that demonstrates our Chefs’ fine knife skills. The rich, flavourful broth of this historic dish is specially created with Francolin partridge, sugarcane, longan, red dates, aged Mandarin peel and ginger. It is served with coriander, chrysanthemum, lemon leaves and crackers to enhance the dish’s layered fragrance.
The Crystal King Tiger Prawn is first marinated with special spices, then meticulously cooked to ensure that the crustacean is crisp on the outside and tender on the inside. This dish is innovatively served with 52-month aged Spanish Iberico ham and a special 25-year aged balsamic vinaigrette dressing with oyster essence to showcase a delicious fusion of Chinese and Western flavours.
Premium quality Canadian beef short rib is the star of the Slow Stewed Beef with Wild Honey and Supreme Soy Sauce marinated in Chef Ken's exclusive sauce. Its sous-wide preparation produces a texture so tender that it can melt in the mouth. Wild honey is added for a sweet touch to enhance the structure and flavours.
In addition, Palace Garden features 1,100 labels of wines and vintages, as well as Chinese Baijiu, cocktails, and Chinese teas. Experienced bartenders use Baijiu to make bespoke cocktails including the “Dream of the Red Chamber”, containing lavender-infused Baijiu, pear puree, Saint-Germain elderflower and basil.
Garden Decadence; Poetically Designed Splendour
An ornately gated entrance and magnificent garden courtyard leads on one side to private rooms, and along another passage to the Main Dining Room where a journey of culinary discovery awaits.
The Magnificent and truly luxurious Main Dining area is anchored by a 35-metre-long, custom-made mural of Suzhou silk chrysanthemum embroidery that runs through an entire wall. The room is further decorated by six free-standing, double-sided Suzhou embroidery fans comprised of bird and flower images. Storied illustrations inspired by the Dream of the Red Chamber, one of China’s Four Great Classic Novels, are etched into a meandering golden mirrored wall that depicts the novel's famously lush Grand View Garden and its multitude of human characters.
The restaurant’s five private rooms continue the aesthetic of historic palace gardens – built for pleasure and admiration. The Pagoda Room pays tribute to the architectural language and scenes of majestic gardens in Chinese history; The Flower Room celebrates timeless romance and culture through captivating vintage oil paintings; The Bird Room’s exceptional Chinoiserie wallpapers form a backdrop of an idealised garden; The Fan Room is filled with beautiful vintage fans prepossessed by aristocracy and court; and The Butterfly Room is an enchanting forest infused with luminescent dancing butterflies.
Hidden Gem; Immersive Bar Experience
The secretive Li Bai Bar is highlighted by digital walls mimicking an immersive landscape ink painting. In this private virtual space, the 270-degree, floor-to-ceiling LED moving painting projects evening cityscapes of Macau and Hong Kong, set against a backdrop of Chinese mountains. Such juxtaposition of modernity and tradition enchant guests as if they are enveloped in another world. Guests can relax amid glittering fireworks that explode across the projection, and raise their glasses to the secluded escape of Chinese literati.
