The Manor at The St. Regis Macao presents a luxuriant dining experience themed Taste of Exquisite – Champagne & Caviar this July. Executive Sous Chef Michele Dell’Aquila has specially sourced a selection of premium Sturia caviar from France and customized a set menu to shine the spotlight on this highly priced delicacy.
Sturia is one of the pioneering French producers of caviar. This farmed caviar has been produced in the Bordeaux region of France for decades. Sturia caviar operates under stringent environmental guidelines to protect the sturgeon fish. Its delicate eggs are then carefully hand-sieved, washed in clean water, mixed with salt and tinned.
“I am delighted to introduce guests to the enticing flavor and texture of Sturia caviar all the way from France. The dishes I have created are centered on the different flavor profiles of the caviar, ranging from delicate to intense, balancing them with the finest ingredients to enhance the texture of caviar.” Michele said.
Guests can indulge in smoked Brittany lobster and Loire Valley asparagus as well as hand-made langoustine spinach ravioli, celeriac and green pea soup, both topped generously with Sturia Caviar Vintage Jasmin and Oscietra Jasmin, respectively. The freshness of the shellfish and green vegetables bring out the sensual taste of caviar.
For entrée, Chef Michele has chosen to pair French turbot in Champagne butter sauce with Sturia Caviar Prestige Oscietre. The subtle taste of this moist fish is the perfect match with big roes that linger on the palate. The main star is the glistening Sturia Caviar Beluga on David Blackmore Wagyu Beef M9+ with almond and Jerusalem artichoke for that unrivaled taste that is both complex and refined.
Rounding off the perfect meal is Valrhona white chocolate with raspberry, yuzu, black sesame sponge, mango pearls and cherry ice-cream.
The ‘Taste of Exquisite’- Champagne & Caviar six-course menu is paired with Laurent-Perrier Brut Millesime 2008, GH Mumm RSRV Blanc de Noirs 2009 and Bollinger la Grande Anne Brut 2007.
The ‘Taste of Exquisite’- Champagne & Caviar is available in the evenings from July 12 to 16, 2021 at The Manor priced at MOP2,988+ per person.
