Explore the essence of Lingnan delicacies through traditional Shunde Dishes:
 
Like Macau, the city of Shunde has been given the honorable title of UNESCO Creative City of Gastronomy. Shunde is famous for being the birthplace of Cantonese cuisine, and so this is where we begin our journey into the aromatic and vast territories of Lingnan cuisine. MGM’s two Cantonese restaurants Imperial Court and Chun each presents a menu of classic Shunde specialties to the Macau locals. Imperial Court’s Chef de Cuisine Homan Tsui has brought dishes like the crunchy and tender “Crispy fried foie gras rolls with caul fat and shrimp mousse” and the golden-crusted “Baked crab with sliced dough stick and garlic”, along with several other traditional dishes that have become less common throughout the course of time. Utilizing fine seasonal ingredients and his expertise, Chef Tsui has revived these nostalgic dishes with his own special twist.
 
 
 
At Chun, Executive Sous Chef of Chinese Kitchen Tam Yim Chan is in charge of their Cantonese dishes. Tam boils down Shunde dishes to five distinct elements: lightness, freshness, refreshing, tenderness and smooth consistency. Marrying technique with art, they have come out with a few limited dishes that encapsulate the traditional taste of Shunde food. Dishes such as the mellow and delightfully rich Stir-fried dace fish noodle with milk and the freshly sweet Deboned carp fish soup with angled loofah, black fungus and olive seeds in Shunde style are just a few delicious examples. In addition, both restaurants are serving the Awakening Lion themed Steamed Lion Bun with Red Bean and 10 years Tangerine Peel, a traditional dim sum delicately crafted into a lion dance head that is made to be the spotlight of the dining table.
 
 
 
Lingnan-Inspired Chinese Cocktail
 
Bar Patua’s manager Paul Zhang has created a special cocktail for the upcoming Awakening Lion dance drama premiering in October – The Lion Cocktail. His inspiration comes from a line written by the famous Chinese poet Su Shi, “If I can eat 300 lychees daily, then I am willing to be a Lingnan native forever.” The lychee, as the most famous fruit from Lingnan, is paired beautifully with Shiwan Yubing Shao, a rice wine specifically from the region. The Lion Cocktail is infused with the distinctive taste of Lingnan, embellished with lemon, lemongrass and the richness of the lychee, culminating into a delicate balance of the sweet and the sour. This delicately light and sweet cocktail is the perfect complement to the hot summer months.
 
 
 
A Hint of Sweetness
 
During the months of July, August, October and December, the MGM Awakening Lion Sugar Crush will be available at Anytime, which is located at the heart of the Spectacle. Guests may fully indulge their sweet tooth and pick their favorites from a vivid and extensive array of all-you-can-eat lion-themed desserts and snacks. On the other hand, the Spectacle will be transformed into the MGM Lion Party, showcasing 13 exuberant and vibrant sculptures, made perfect for spending a delightful summer’s day out with family and friends. Our chef’s team has specially designed the MGM Awakening Lion afternoon tea set in the theme of Leo zodiac sign to coincide with the colorful exhibit. The MGM Awakening Lion Sugar Crush is available on weekends from 3pm to 6pm, priced at MOP 228 per person, MOP 428* for two and MOP 118* per child (7-12 years old); the MGM Awakening Lion afternoon tea set is priced at MOP 298* for two persons, and is available on weekdays from 3pm to 6pm.
 
 
 
Additionally, during the weekends of July and August, Rossio and Anytime will host fun Awakening Lion themed workshops – there will be lion face-painting activity and chocolate painting workshops, allowing children to immerse themselves in arts and crafts, which are the ideal summer activities to get them engaging with their inner artists.
 
 
 
Tasty Delights for Midsummer Weekends
 
The bright arrival of the midsummer sun calls for a rich and fulfilling breakfast with close friends and family. During July, Grill 58’s MGM Awakening Lion Brunch will be available every Sunday from 12pm-3pm. Visitors can enjoy delicious dishes with specially selected ingredients in the four-course brunch with dessert trolley. Dishes such as Fine de Claire Oyster, Fermented Tomato and Smoked Bonito Oil; Lobster Bisque, Charred Boston Lobster and Lemon Aioli, and Wagyu Beef Burger, Taleggio Cheese, Bacon, Fries will be available amongst others. In the same month, Grill 58 is also introducing the Teppanyaki Escapades – Australian Black Truffle, a teppanyaki experience that serves fine seasonal black truffles from Australia with deluxe ingredients like foie gras and tuna toro. The restaurant’s experienced team will guide the guests to the perfect dining journey and offer perfectly paired wines to guarantee a decadent experience for your taste buds.
