The Manor at The St. Regis Macao is pleased to present another edition of ‘Diamonds of the Kitchen’, a six-course Alba white truffle menu to delight guests with the earthy and woodsy flavors of this rare gem. Curated by Executive Sous Chef Michele Dell’ Aquila, each dish of this menu elevates the Alba white truffle and offers guests an exquisite gastronomy journey.
The Alba white truffle from Italy, known as the ‘diamond of the kitchen’, is a rare ingredient and can only be harvested towards the end of Fall and beginning of Winter. With such a limited supply, the truffles are greatly sought after by many chefs and aficionados. The ‘Diamonds of the Kitchen’ six-course menu wonderfully showcases this delicately-marbled truffle with seasonal ingredients from across the globe to bring out the best of its flavors.
Menu highlights include the L’Amadai, a Japanese tile fish that is moderately fatty but light and fascinatingly sweet, resting on a bed of Italian white polenta with French heirloom pickled beetroot, watercress, nashi pear, and topped with generous shavings of the Alba white truffle. With such a simple flavor profile of savory to sweet and the earthiness of the truffle, this seafood dish is intricately unique. From the sea to the land, another notable dish is the Miyazaki Wagyu Beef Striploin which is cooked to perfection and is accompanied by cannellini bean purée, chanterelles, Tokyo turnip, and the pièce de résistance of each dish, Alba white truffle shavings. To finish the dinner on an exemplary note is The Piedmont Hazelnut, a dessert mousse made from the most prized variety of hazelnut, and comprising of renowned Italian chocolate from Domori, gianduja chantilly, Ferrero Rocher ice cream, and Alba white truffle essences, fine-tuned by Chef Michele to present with a wonderful mix of flavors.
Guests can elevate their dining experience further with a specially curated wine pairing program featuring premium wines from around the world, including Pol Roger Champagne from France, a Barolo DOCG from Italy, a 10-year-old Madeira from Portugal and more, designed to accentuate the decadent flavors of the truffles and the seasonal produce. From the starter to the dessert, this dinner menu is an extraordinary end to an evening.
The ‘Diamonds of the Kitchen’ six-course dinner menu is available until December and is priced at MOP2,288+* per person or MOP2,788+* per person with wine pairing.
