To celebrate Italian Republic Day on June 2nd, ‘A Celebration of Fine Produce – Italian Republic Day Wine Dinner’ offer guests their choice of a selection of dishes featuring the absolute finest ingredients from the land and seas of the sun-drenched Italian peninsula, comprising six dishes and a wine selection that pays homage to Italy’s world-famous wine heritage.
 
 
 
With Italian cuisine and produce enjoyed around the world and renowned for its flavor and quality, The Manor’s Executive Sous Chef and native Italian Michele Dell’Aquila said he is thrilled to treat guests to the finest ingredients of his homeland.
 
 
 
“As a chef proud of my Italian heritage and the impact Italian cuisine has had all over the world, these dishes are close to my heart, and we have crafted it to provide a contemporary interpretation of the best that Italy has to offer,” Chef Michele said.
 
 
 
“The menu honors Italian culinary tradition that has evolved over hundreds of years as well as our own tradition at The Manor that focuses high quality ingredients shining through as the star of the dish – my personal favorite is the European sea bass which I feel represents what contemporary Italian cooking is all about.”
 
 
 
A Celebration of Fine Produce – Italian Republic Day Wine Dinner menu includes authentic Fassona beef from the Alps of the Piedmont region’s Alps, presented ‘tartare’ to highlight the rich beef flavor, and served with tuna sauce, red onion and truffle caviar for balance, and a lobster ‘zeppole’ doughnut for texture.
 
 
 
The sweet and tender flavor of European sea bass is served pan-seared with acqua pazza ‘crazy water’ broth and Pachino cherry tomatoes. The acidity of the citrus flavored broth and delicate sweetness of the cherry tomato is a perfect match for the buttery texture of sea bass.
 
 
 
For an authentic Italian-inspired dessert to finish, fresh figs and apricot are served with creamy buffalo ricotta and Mascarpone ice cream, offering a perfect balance of sweet and sour flavors and a variety of textures.
 
 
 
The wine pairing, carefully curated by in-house Sommelier David Duan, draws inspiration from the geographical source of much of the dining menu and features wines from Italy’s most famous wine regions including Cantina Mesa in Sardinia, as well as Capezzana – one of the oldest family-owned wineries from the famous Tuscany wine region.
 
 
 
While the Celebration of Fine Produce – Italian Republic Day Wine Dinner on Friday June 4 is already sold out, guests will be able to enjoy dishes from the a la carte menu throughout the month, before a celebration wine dinner featuring produce of the United States scheduled for July 2, in time for US Independence Day festivities.
