Almost three years ago, Mood & Moor opened its doors in a spaciously elegant heritage-listed building just down from Macau’s most famous landmark, the Ruins of St. Paul’s.  
 
In hindsight of course, July 2020 wasn’t the best time to start a new business, especially such a large restaurant designed to accommodate significant numbers of patrons. But with the recent opening up of the borders and relaxation of travel restrictions, the owners of Mood & Moor are hopeful that more and more people will discover the unique attractions of this establishment, and are planning a range of new offerings to entice guests.
 
Not only does Mood & Moor serve delicious Italian fusion cuisine in very pleasant surrounds, but importantly for wine lovers, it has an impressive range of fine wines that are all available by the glass, courtesy of their clever self-service dispensers, WineStation by Napa Technology.    
 
“This wine preservation and pouring system is able to deliver a perfect glass of wine every time, in three different portion sizes (tasting, half glass or full) using an IC card system,” explains Roger Lai, one of the partners in the restaurant.  “It uses argon gas to keep the wines fresh after opening and the freshness can be maintained for around 60 days.”
 
This allows Mood & Moor to offer an extensive variety of fine wines to its customers by the glass, that would otherwise only be available by the bottle.  Currently there are an amazing 108 labels to try, and there are plans to extend the selection to around 500. Of these 88 wines, 24 are exclusively available as ‘free flow’ during a three-hour period daily, meaning guests can sample as many as they like.  
 
“We source our wines through suppliers in Macau and Hong Kong, but we also buy direct from producers, mainly in France,” notes Roger. “I highly recommend our guests to try these labels as they are high quality wines at very reasonable prices and are found exclusively here at Mood & Moor.”
 
Roger adds that they currently have around 20 of these exclusive labels, and while he encourages customers to try them all, he admits that his favourites are Pinot Noir and Chardonnay from Burgundy.
 
“Some of the wines in the dispensers are arranged according to regions and sub-regions, while others are arranged according to grape variety or food pairing recommendations,” Roger explains.
 
The main bistro area of the restaurant on the ground floor seats around 70 pax, but the total space covers a staggering 16,000 square feet over four levels.
 
“The first floor is for wine education courses, private functions and wine tasting events, while the second floor, which is yet to be launched, has two private dining rooms and bar,” says Roger. “And then there is the rooftop area.  It’s not open yet, but we are working on it, and plan to make it a highly sort after, exclusive venue for private gatherings.”
 
With the prospects of an improving business environment, the team at Mood & Moor are planning a number of new offerings and events, including a delicious new Tapas menu, perfect for wine pairing. 
 
“We are also planning to host some small-scale wine pairing dinners for groups of around 12, featuring some very high-quality wines paired with a special menu.  And we are also hoping to present a special evening with a buffet dinner and live string quartet performance.”
 
Given all the space available, corporate events, wine workshops and even blind tasting competitions are all future possibilities.
 
“We have the space and facilities, so it’s really just up to our imagination. And now Macau has opened its doors again, I think the worst is behind us and the prospects for the coming year are looking good,” Roger concludes hopefully.
 
 
Given his passion for wines, it’s not surprising that Roger Lai is keen to host wine education workshops at Mood & Moor, to help enhance the general knowledge of local wine lovers and introduce them to some of his favourite fine wines. In December last year, Mood & Moor Wine Club did just this, offering locals a unique opportunity to taste some of the best De Stefani wines from Italy, and to have an in-depth insight into the philosophy behind the brand. This classroom-style event was conducted by Roberto Gallotto, De Stefani Brand Ambassador in Asia, and included a comparative test of De Stefani branded glassware and a short video tour of the barrel room conducted by the winemaker himself, Alessandro De Stefani. At the end of the event, participants even got to take home their own bottle of Prosecco 0.15, offered as a gift by Mood & Moor.
