The Grand Lapa, Macau is excited to welcome two new cheffing talents to kick off the new year. Culinary veteran Mr Andy Ng has been appointed as the new Executive Chinese Chef of Kam Lai Heen Restaurant, and Mr. Edgar Alves arrives as the new Chef de Cuisine of Café Bela Vista, the hotel’s signature restaurant known for its authentic Portuguese and Macanese cuisine, and wide array of international gourmet dishes.
With a career spanning four decades, Chef Andy Ng brings years of experience to his position, including two years as Executive Chef of Macau’s Michelin three-star restaurant, The Eight, which received its second Michelin star under his leadership.
Born and raised in Hong Kong, Chef Ng began his culinary journey at the age of 14. Since then, he has honed his skills at top-tier restaurants and world-class hotels around the world, including Mandarin Oriental in Manila, Philippines where he won the Master Chef Award at the Great Hong Kong Eating Adventure. He has also served as Executive Chef at restaurants in Indonesia, Singapore and China. Prior to joining the culinary team at Grand Lapa, Macau, Chef Ng was the Executive Chef of the Man Ho Chinese Restaurant at the JW Marriott Hotel Macau.
Kam Lai Heen is a favourite among the business crowd, and Chef Ng is further developing the restaurant’s reputation by introducing innovative updates of popular Cantonese dishes.
As such, he has created a special menu called Chef Andy’s Michelin Signature Dishes, including the must-try “Andy’s sweet and sour pork with pineapple”, with fresh pineapple and thin slices of tender pork wrapped in Chef Ng’s homemade sweet and sour sauce, then deep-fried.
Meanwhile, over at Café Bela Vista, Chef Edgar Alves brings a wealth of culinary knowledge and more than a decade of experience working at various hotels and restaurants around the world.
He began his career in Portugal, quickly rising from the position of Sous Chef at Hotel Orizon Campo Real to Chef de Cuisine at the five-star Hotel CS Montargil. He later gained experience at Vila Verde, an all-inclusive five star resort in Cape Verde Island, Africa and Kartoffelkaelderen Restaurant in Copenhagen, Denmark. More recently, Chef Alves was Chef de Cuisine at Casa Lisboa and Executive Chef at The Seafood Room in Hong Kong.
Chef Alves is skilled at cooking a variety of cuisines – Portuguese, Italian, French, Spanish and Western. He is passionate about using only the finest seasonal ingredients to create delicious, well-crafted signature dishes. While staying true to the original flavours, he also likes to add a modern twist to reflect his personal style.
